Why didn't they just turn on the garden hose and pass it around, like we used to do as kids?

Anyone ask why it takes 8 steps to purify water? Let's see: steps 1-6 - carry bucket from nearby well to still; step 7 - dump water into still; step 8 - heat still. What am I missing?
