What's for dinner on a cold winter day?
We have been having winter-like weather the past few weeks, with lows in the teens and highs in the low 30s. There are quite a few really good meals that hit the spot on days like that: chili, stew, ham & beans, etc.
Today we had a nice pot roast with carrots and red potatoes. It was yummy. However, I think the favorite in the White house is a dish Marilyn makes called Skumalge. It has ground beef, noodles, tomato sauce, onions, mushrooms, and lots of other stuff, and is topped with shredded cheese. It's really good on a cold winter day.

So many great variations and the Portuguese aunties are going to scold me for not having one of my own but here's one I found:
2-3 medium sized smoked ham hocks or ham shanks
1 pound Portuguese sausage, diced
1 medium sized Maui onion*, coarsely chopped
2 medium sized potatoes, cubed
1 cup diced carrots
1 cup diced celery
4 cups coarsely chopped cabbage
2 15-ounce cans kidney beans with liquid**
1 14.5-ounce can diced tomatoes
1 6-ounce can tomato paste
3 garlic cloves, minced
1 bunch cilantro (Chinese parsley), coarsely chopped
a handful of black peppercorns
3-4 dried bay leaves
And if you really want to add a kick, you need to pour over a little home-made Hawaiian chili pepper water.
I try not to eat this in the middle of the day because it gives you the kind of Hawaiian paralysis that makes you snore.
